    Lunch toastie: lamb, tomato relish, sauerkraut and two cheeses (chedder and an unidentified hard white cheese), on a dark capeseed bread.

        It’s a variation based very loosely on a Reuben sandwich. I find the sauerkraut works really well with those types of ingredients, and my current batch is made with some fennel which adds some extra depth of flavour too.
